Carola Cappa


Carola Cappa is assistant professor at the Department of Food Environmental and Nutritional Sciences (DeFENS), University of Milan. Her research is mainly applied to cereal science and product development, focusing on food processing, product quality assessment and shelf-life, with expertise in high hydrostatic pressure, turbo cooking and extrusion processes. A combined approach of chemical and enzymatic techniques, rheological tests and image analysis is adopted. Uni- and multivariate statistical analyses and Design of Experiment techniques are applied for product development studies. Orcid: 0000-0002-1437-3882
