Jürgen Sieg has been working for J. Rettenmaier in the Business Unit Food Ingredients for 21 years. Via global sales, his career led him to application development for baked goods and meat applications and finally to the area of ​​food law and nutrition. The objective of his work is the legal positioning of fiber in the EU, but also worldwide. This raises the question of the nutritional adjustment of intrinsic and extrinsic fiber via scientific evidence as a basic requirement.
